Celiac-Safe Sesame Seed-Topped Burger Buns Recipe

Ingredients:

  • 1 cup Anthony’s Organic Whole Psyllium Husks (available here)
  • 1/2 cup Organic Tapioca Flour Starch (available here)
  • 1/2 cup Organic Gluten-Free Millet Flour (available here)
  • 1/2 cup Organic Sorghum Flour (available here)
  • 2 teaspoons instant yeast
  • 1 1/4 cups warm water
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1/4 cup olive oil (or melted butter for a richer taste)
  • 1/4 teaspoon salt
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons Anthony’s Organic Hulled Sesame Seeds (available here)

Instructions:

  1. Prepare the dry ingredients: In a large mixing bowl, combine Anthony’s Organic Whole Psyllium Husks, Organic Tapioca Flour Starch, Organic Gluten-Free Millet Flour, Organic Sorghum Flour, and instant yeast. Stir to combine.

  2. Activate the yeast: In a separate bowl, mix the warm water, honey (or maple syrup), and apple cider vinegar. Add the dry ingredients to the yeast mixture and stir until combined. Let it sit for 5-10 minutes to allow the yeast to activate.

  3. Mix the dough: Add the olive oil (or melted butter) and salt to the dough mixture. Stir until the dough forms, and it starts to come together. The dough will be sticky but should hold together well.

  4. Knead the dough: Turn the dough out onto a lightly floured surface (use gluten-free flour) and knead it for about 2-3 minutes until smooth. If the dough is too sticky, add a little more sorghum flour.

  5. Form the buns: Divide the dough into 6-8 equal portions and shape them into round burger buns. Place them on a Hamburger Bun Pan (available here) to create perfectly shaped buns that bake evenly.

  6. Let the dough rise: Cover the buns with a clean towel and let them rise for about 1 hour or until they’ve doubled in size.

  7. Top with sesame seeds: Gently brush the top of each bun with a little water or olive oil, then sprinkle Anthony’s Organic Hulled Sesame Seeds on top to create a crunchy, flavorful topping.

  8. Bake the buns: Preheat your oven to 375°F (190°C) and bake for 20-25 minutes, or until the buns are golden brown and cooked through. The buns should be firm to the touch but soft inside.

  9. Cool and serve: Let the buns cool on a wire rack before slicing. Serve with your favorite gluten-free burger or sandwich filling.
