Celiac Safe Irish Soda Bread
Irish soda bread is a staple on St. Patrick’s Day, known for its slightly sweet and tangy flavor, with a hearty texture. It’s usually made with buttermilk and flour, but our Celiac-safe version ensures everyone can enjoy it!
Ingredients:

- 1 tsp salt

- 1 ¼ cups buttermilk (or substitute with dairy-free milk if needed)
- 1 tbsp vinegar (to sour the milk)
- 1 egg (optional for extra richness)
Instructions:
- Preheat your oven to 375°F (190°C) and grease a baking sheet or line it with parchment paper.
- In a large mixing bowl, combine the gluten-free flour, baking soda, salt, and sugar.
- Create a well in the center and pour in the buttermilk and vinegar mixture.
- Stir until the dough comes together. You may need to use your hands to knead it gently.
- Shape the dough into a round loaf and place it on the prepared baking sheet. Cut a shallow "X" on top with a knife.
- Bake for 30-40 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Cool slightly before slicing and serving with butter or jam.

Ingredients:

- ½ cup butter, softened

- Pinch of salt

Instructions:
- Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
- In a mixing bowl, combine the gluten-free flour, cornstarch, and salt.
- In another bowl, cream the butter and powdered sugar together until light and fluffy.
- Gradually add the dry ingredients to the butter mixture and mix until a dough forms.
- Roll the dough into a ball and press it evenly into the prepared pan.
- Use a fork to prick the surface of the dough, then bake for 25-30 minutes or until golden brown around the edges.
- Let the shortbread cool before cutting it into squares or wedges.

- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
Instructions:
- Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
- In a large bowl, combine the gluten-free all-purpose flour, oat flour, flaxseed, caraway seeds, salt, and baking powder.
- In a separate bowl, mix together the warm water, olive oil, and apple cider vinegar.
- Slowly pour the wet ingredients into the dry ingredients, stirring until a dough forms. It should be slightly sticky.
- Pour the dough into the prepared loaf pan and smooth the top with a spatula.
- Bake for 40-45 minutes or until the bread is golden brown and a toothpick inserted into the center comes out clean.
- Let the bread cool completely before slicing.
